This is a clean eating recipe intended to get you creative in your own kitchen and come up with your version. I’m not telling you to not try this recipe exactly as it is because it’s super tasty but I say this because I stumbled upon this yumminess by using a bunch of leftover ingredients in my fridge. This is how magic happens! I think by now you know that’s how some of my quick meals come about. I really wanted to use avocado but I ate my last one as a whole the day before because I was craving it badly! LOL So instead I used the only other green thing I had… sugar snap peas. Nevertheless STILL YUMMY! Spring is right around the corner and Summer will come faster than you know it. This is a perfect start to satiate your palate and trim your body down. Enjoy!
I didn’t specify how to bake your chicken because you can use practically anything you want even leftovers. You can also replace chicken with fish to change it up a bit. Here’s my favorite go to baked chicken…
NOTE: My favorite baked chicken is simply some kosher salt, fresh ground pepper and ground paprika. Drizzle the top with olive oil. Bake at 375 F degrees for about 30 minutes in a baking dish sprayed with cooking spray.
serves about 10 tacos
1 head of butter lettuce (or cabbage)
1 mango, small cubes
1/2 red onion, finely chopped
1 small carrot, finely chopped
10 sugar snap peas, finely chopped
1 large garlic clove, minced
1/3 cup black beans, rinsed
1/3 cup corn
1/2 lemon, juiced
1/2 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
1 tablespoon fresh chopped parsley (optional)
2 chicken breast, baked and cooled
In a medium bowl mix all of the mango, onion, carrot, sugar snap peas, black beans, garlic, corn, lemon juice, parsley, salt and pepper together. Cover and let it sit out for about an hour or in the fridge for a couple of hours.
Let your baked chicken cool and then slice it thin or in small pieces.
Lay out the larger leaves of the lettuce out and assemble them by placing the chicken on first and topping with the veggie mix. And eat as a taco.
